PJ - thanks so much for sharing the panettone recipe. I'd never thought I could perfect that dough, but you gave me the confidence to try it. The tube pan worked to perfection! I put crystallized ginger, apricots (soaked in rum, even though I know soaking's not traditional), golden raisins, chocolate chips and chopped walnuts in mine. Took a bit longer to rise, but oh-so-delicious. I wrote it up on my blog on Dec. 5th at www.tastingspoons.com (giving baker's banter all the credit, of course) if you'd like to see mine.
