Well, most silicone mats can be baked on, so zero-waste folks like to use them in place of parchment. (This is especially handy if your pans are dark and have a habit of burning the bottoms of your cookies, because the silicone provides a little extra insulation.) But yes, they're typically good for rolling as well!
