Hi Jim! I've gotten some feedback from a few different bakers who have baked this recipe many times. The general feedback was that it is not as flaky as those you can get in the store. Our version is light, it's crunchy, but it won't give you that store-bought explosion of crust crumbs. So crisp, yes. Flaky, not as much. And using the cloche is ideal at home to help create steam.
